Our KODAWARI
01
Painstakingly Extracted Tonkotsu Broth
Our rich and flavorful broth, which takes a great dedication to create and maintain, has been a key to every single bowl we offer. We'd love you to experience the essence from quality pork and chicken bones.
02
Comfortably Chewy Mid-thick Noodles
The reason why our noodles are mid-thick is not because we're blindly sticking to the traditional "Iekei" style, but because we believe them to be a perfect combination with our appealing soup.
03
Our Kodawari On Toppings
All of our bowls come with an attentively cooked and flavored Char-siu slice as well as spinach, which will be a nice green accent in a bowl. Furthermore, our "cooked-to-perfection" ajitama is a highly recommended topping.
-Passion in a bowl-
from neighbors to tourists
Despite its proximity to Tokyo’s biggest business district Shinjuku, Nakano-Shimbashi is such a peaceful and intimate neighborhood. Thankfully, we have been patronized by our neighbors since we started at this place. However, we have no intention to settle in this stage. As a specialty ramen shop in the international city Tokyo, now we’d love to welcome more ramen lovers from all over the world!
(Shoyu Tonkotsu) Ramen
Chewy, happy-to-slurp noodles come with our attentively finished Tonkotsu soup. Unlike conventional Iekei style soup, known for its strong flavor and a bit greasy mouthfeel, we offer “the best of the both worlds” soup between soy sauce flavor and pork / chicken bones broth.
Signature Bowls
Shio Ramen
Technically, our shio ramen should be categorized in shio tonkotsu. Its soup is full of richness and comfort, which are created only by taking a great deal of time with love and care. We’d love you to experience this “want another sip” feeling with our shio ramen!
